•1 roll 1 lb breakfast sausage, cooked and crumbled
•1 cream cheese 
•1 can (10 oz) Rotel diced tomatoes and green chiles very well drained
•2 cans (8 oz) chilled croissants


Preheat  oven 375ºF.
Combine sausage, cream cheese, drained Rotel tomatoes and green peppers.
Separate rolls to triangles. Cutting triangle in half lengthwise to to 2 triangles. Using a small cookie scoop, spoon sausage filling onto each roll and roll up.
Baking for 15 min or.
It is very important to drain Rotel tomatoes. I suggest draining them in a colander and pressing out any excess liquid with paper towels. You need to remove as much moisture as possible from the tomatoes.
I used Jimmy Dean sausage. Can replace turkey sausage.
I like to pulse cooked sausage in a food processor to get it very finely chopped. It's not necessary, but it helps to evenly incorporate all the ingredients.
Can substitute low-fat cream cheese if preferred.
Can use low fat croissants. I use the reduced fat croissants all the time. You can't tell the difference.
You can prepare the filling in advance and refrigerate until ready to assemble the croissants. The filling will keep for up to 3 days in the refrigerator.
I find it easier to cut croissants in half with a pizza cutter.
I use a small cookie scoop to scoop the filling onto the crescent rolls.
These bites are delicious straight from the oven or cooled to room temperature.
