*Ingredients:
•Potatoes cut into small pieces (I use russet potatoes)
•A few tablespoons of olive oil
•2-3 garlic cloves, minced
•1 to 2 tablespoons chopped fresh parsley
•Grated fresh parmesan
•Salt and pepper to taste
*Instructions:
Preheat the oven to 450°F.
Cut the potatoes into cubes or wedges. Bring a pot of water to a boil.
Add potatoes and cook 3 to 6 minutes depending on size.
While the potatoes are cooking, put some oil in a cast iron skillet or another
fry and heat in the oven.
Drain the potatoes and return them to the pan. Put the jar back
on the burner and shake to dry the potatoes and make them rough
area. This is what gives roast potatoes that perfect crust.
Add the potatoes to the hot oil, toss to coat and roast, turning once or twice.
When the potatoes are almost tender, sprinkle with
garlic and parmesan, season with salt and pepper and continue cooking until
the potatoes are tender. Turn at least once more for even browning.
Just before serving, toss with chopped fresh parsley.
