Peasant casserole

*You will need:

•6 cups diced potatoes.
•1 tablespoon of extra virgin olive oil.
•1 ½ cups shredded Colby or Monterey reduced-fat cheese.
•6 slices Canadian bacon, diced.
•2 sliced green onions.
•24 oz (2 cans) fat-free evaporated milk.
•2 cups egg substitutes from egg beaters.
•¼ teaspoon of salt.
•¼ teaspoon of black pepper.

*How? 'Or' What:

In a nonstick skillet, heat the oil over medium heat and cook the potatoes until lightly browned.
Put the potatoes in the casserole. Topping with ham, cheese also green onion
Combine egg beaters, evaporated milk, salt and pepper in large bowl until well blended. And pour on potato mix.
In preheat oven at 375°, baking for 45 to 55 min .
Let set before cutting to 15 equal portions.
Serving hot.
