MEXICAN CASSEROLE



*Ingredients

°1 pound lean ground beef
°1 can of ranch-style beans
°1 bag 10-12 oz tortilla chips, crushed (I didn't use the whole bag)
°1 can Ro-tel tomatoes
°1 small onion, chopped
°2 cups shredded cheddar cheese, divided
°1 package taco seasoning
°1 can cream of chicken
°1/2 cup of water
°sour cream and salsa for serving

*How to do it

Preheat oven 325 degrees. In  skillet, brown meat & drain fat. Stirring in beans, tomatoes, onion, taco seasoning, soup / water. Simmer on medium heat to well mixed / heated through.
Grease 9*13 casserole plate. Lay down a layer of crushed tortilla chips, followed by a layer of the meat/bean mixture, then half of the cheddar cheese. Repeat layers. Covering with foil & baking about 20-30 minutes 
Let stand 5 to 10 minutes before serving. Garnish with sour cream and salsa
