LEAN CHICKEN AND BROCCOLI CASSEROLE




*INGREDIENTS :

°3 boneless, skinless chicken breasts, cooked and diced
°2 packages (10 oz) frozen broccoli cuts, cooked and drained
°2 cans (10-3/4 oz) 98�t-free cream of chicken 
°¾ cup milk evaporated fat-free 
°1 tsp lemon juice 
°1 cup grated reduced-fat cheddar cheese 
°½ cup dry Italian-flavoured breadcrumbs 
°2 tbsp grated Parmesan cheese Cooking spray

*INSTRUCTIONS :

Heat the oven to 350 degrees. Grease a 9×13 inch baking dish with cooking spray.
In a large bowl, combine the cooked chicken and broccoli.
In a small bowl, mix the soup, milk and lemon juice. Add this to the chicken and broccoli and stir to combine.
Spread the mixture evenly in the greased baking dish.
Sprinkle with grated cheddar. Mix the breadcrumbs and Parmesan together and sprinkle evenly over the top of the pan.
Spray lightly with cooking spray.
Bake, uncovered, at 350 degrees for 25 to 30 minutes, or until bubbly.
