You can vary the quantities in this soup recipe; it is always excellent and comforting.
* Ingredients :

° 3 ½ cups peeled and diced potatoes
° 1/3 cup diced celery
° 1/3 cup finely chopped onion
° 3/4 cup cooked ham, diced
° 3 ¼ cups of water
° 2 c. powdered chicken broth
° 1/2 c. salt
° 1 c. pepper
° 5 c. tablespoon of butter
° 5 c. all-purpose flour
° 2 cups of milk
* Preparation steps :
In a saucepan, put the potatoes, celery, onion, ham and water. Bring to a boil over medium heat and simmer until the potatoes are tender, about 10-15 minutes. Add the broth, salt and pepper.
In other saucepan, melt butter on medium high heat. Whisk with a fork, add the flour and cook, stirring constantly, for 1 minute. Slowly add the milk. Continue to stir and heat over medium-low heat until thickened, about 4-5 minutes.
Add this mixture to the pot of vegetables and heat everything up. Serve immediately.
