* Blueberry Crumb Bars *

Crumb desserts are like a whole new level of deliciousness. I made this particular crust and filling in my blueberry crumb bars, this lemon curd dessert and now these strawberry and cream bars. I'm just coming back to it. Why play with a good thing? 

° 120g Oatmeal
° 70g Semi-complete flour
° 30g Complete cane sugar
° 1tbsp. coffee baking powder
° 1tbsp. Cinnamon coffee
° 1 pinch Salt
° 50g Butter
° 1 egg
° 200g Fresh blueberries (or frozen)
° 1Organic orange (or untreated)
° 20g Complete cane sugar
° 1tbsp.cornstarch

* Preparation-steps

Start by preparing the blueberry jam: in a saucepan, heat the blueberries with the zest of one orange and the juice of half an orange as well as the sugar.
Reduce for about ten minutes.
Let cool and add the cornstarch.
In a bowl, combine all the dry ingredients for the crumble, add the butter and mix again until all the ingredients are incorporated.
Add the previously beaten egg. The result is a paste that does not crumble.
In a dish or a mold lined with baking paper, spread 3/4 of the crumble dough.
Flatten well with your hands.
Pour in the blueberry jam then the rest of the crumble crumble.
Bake 25 minutes at 180 ° C.
Let cool completely before cutting into six squares.
